Made in the traditional sparkling wine process where the second fermentation take place in bottle, and the wine is left on its lees until disgorgement, in this case 15 months. Bright, pale gold hue, very fine bubbles. Chalky top note that come from Chardonnay’s dominant role in this classic 65% blend with Pinot Noir. Has a citrus freshness, purity, which also manifests on the palate. Lees contact and the red fruit give palate weight, a satisfying fullness, mouth-filling flavour. Not an aperitif style, it’s richer, fuller than that, with a very long finish. Just 1600 bottles made.
